Whole30 Taco Salad: Best Salad North Of The Border!

Who doesn’t love a good taco salad?

This Whole30 taco salad recipe uses lettuce, avocado, tomato, onion and ground beef, along with plantain chips for that much-needed crunch that’s essential to any good taco salad!

Ingredients

Salad:

  • 1 head of romaine lettuce, cleaned and chopped
  • 1 avocado, cubed
  • 1 cup of plantain chips (grab em at Trader Joe’s)
  • 3 large tomatoes, diced
  • 1/4 cup red onion, diced

Taco Meat:

  • 1lb ground beef
  • 1 onion
  • 2 gloves of garlic, minced
  • 1/4 cup of fresh cilantro (optional)

Dressing:

  • 2 tbsp fresh lime juice
  • 1 tsp dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1tsp chopped cilantro
  • 3 tbsp olive oil

 Instructions:

Heat olive oil, sauté onion for 4-5 minutes. Add minced garlic. Then add meat and taco seasoning, breaking up with wooden spoon. Cook thoroughly.

Next, prep the salad by mixing together lettuce, tomatoes, red onion and avocado.

Add cooked meat to salad, along with plantain chips. Prepare the dressing, add to the salad, mix, and then serve.
