Whole30 Chile Lime Pork Chops

Who says you can’t have Mexican food on your Whole 30? These roasted Chile lime marinated pork chops are straight south of the border with no cheese needed. They start off with a nice mild spicy and finish with a zingy zest of lime.

With such simple ingredients, they’re a cinch to make. Get cookin’!

Ingredients

  • 4-5 pork chops
  • 1 hatch green Chile
  • ¼ cup olive oil
  • ½ lime
  • salt
  • pepper

Instructions:

Preheat oven to 350 F, and roast a whole hatch green Chile for 15 minutes.

Remove from oven and add to a blender, with olive oil, salt and pepper.

In an air tight container add pork chops and pour the hatch green Chile sauce over top. Marinate overnight.

In a skillet, heat olive oil to medium, then sear pork chops. Cook until completely cooked inside. Then remove from heat, let sit 5 minutes, squeeze lime juice and enjoy!
