15 Whole30 Lasagna Recipes: Who Needs Pasta?

Lasagna is a staple one-pot–or one-baking-dish, rather–meal. It’s the perfect culmination of veggies, protein, sauce and spice.

Being comprised of layers of pasta noodles smothered in sauce and cheese, traditional lasagna is not quite Whole30-friendly at all…but that doesn’t mean there aren’t plenty of amazing Whole30 versions out there!

If you’re dying to find your go-to lasagna recipe for your Whole30, we have rounded up 15 of our favorites to get you started!

NOTE: A handful of these recipes call for “cashew cheese”, “cashew cream”, “almond ricotta”, or another dairy stand-in. While the Official “Can I Have” Guide asks you to please not make vegan cheese using nutritional yeast (which is exactly what some of these recipes do), technically these ingredients are compliant and this is simply a SWYPO issue, it’s up to you how strict you are being on your Whole30.

If you are following the rules closely, eliminate all non-dairy cheese/cream from these recipes. If not, follow the recipe as is!

Whole30 Eggplant Lasaga Recipes

What Great Grandma Ate’s lasagna recipe uses delicious (but potentially non-compliant, see above) cashew cream, eggplant, ground turkey and plenty of fresh basil for a fresh, flavorful meal.

2) Paleo Eggplant Lasagna

This recipe from Big Eats Tiny Kitchen features grass-fed ground beef, eggplant in place of noodles, mushrooms and plenty of fresh parsley–we’re suckers for some fresh herbs! This recipe has no cheese or cheese substitute, so this is a good recipe to start with if you’re avoiding potential SWYPO foods.

3) Lasagna with Eggplant Noodles and Cashew Cream

This Whole30-friendly recipe from The Foodie Eats features ground beef, plenty of mushrooms, balsamic, dried herbs, and spinach with a beautiful, crusty cashew cream topping. Let this one sit for at least 30 minutes (although the recipe author recommends an hour if you can bear it!) so that it will hold together when you slice into it.

4) Paleo Eggplant and Zucchini Lasagna

Want a variety of veg instead of just one “noodle”? Paleo Grubs has the answer! Yellow squash, zucchini and eggplant make up the layers and a gorgeous meaty tomato sauce paired with mushrooms and spinach make up the filling. Make sure you leave out the wine from the sauce to keep things Whole30!

Need some serious protein? Real Simple Good doubles up on the meat with grass-fed ground beef and Italian sausage. Don’t worry, like any good Whole30 recipe, this one certainly doesn’t skimp on the veggies either!

Paleo Newbie’s lasagna recipe loads up on sausage, ground beef, zucchini and tomato-y goodness. Add some cashew cheese for some creaminess and some red pepper flakes if you like an extra kick!

7) Paleo and Vegan Lasagna

Looking for a vegetarian option for your Whole30 lasagna? Healthy Recipe Ecstasy has the solution for you! Loaded with tons of zucchini and fresh herbs and smothered in an artichoke tomato sauce (!!!), this recipe keeps it light while still packing a flavor punch. Pair this with a protein main like grilled chicken or top with a fried egg or two!

This recipe includes optional nutritional yeast for some cheesy flavor, but Whole30 purists are welcome to omit that ingredient!
