Whole30 chicken salad recipe is a favorite of mine – it’s relatively quick, easy, and doesn’t require any oven usage, making it perfect for the summer!

Best of all, you can whip up this Whole chicken salad as a big batch and eat it all throughout the week! Sound good? Let’s get going!

Whole30 Chicken Salad Recipe

Ingredients:

  • 1.5 lb of chicken breast, cooked and shredded (or chopped – however you like it)
  • 2 cups of red, seedless grapes, halved
  • 1/4 cup red onion, chopped
  • 1/4 cup of homemade mayo (see our Whole30 mayo recipe here)
  • 1/2 cup chopped walnuts, roasted
  • 1 avocado, diced
  • 2 tsp lemon juice
  • salt and pepper to taste

Instructions:

In a large bowl, combine shredded chicken, grapes, red onion, walnuts, and avocado.

In a separate bowl, combine your homemade mayo with the lemon juice, salt, and pepper.

Add the mayo mix to your large bowl and mix everything together. Ta-da, you’ve got your chicken salad!

Bonus Ideas:

You might also try adding dill and celery depending on how you feel about those flavors. I’m not a huge fan of celery in my chicken salad, but some love it! If you’re not big into mayo, you might try just adding a little extra avocado – some find that mushy avocado can be enough to hold the ingredients together, but I prefer adding some mayo myself.
